Tennessee is blessed with so many places to go fishing that just about anyone can catch a fish in this state. And where there is fish catching, most likely there is also going to be fish eating…and when eating’s involved it’s best to get Wild Side Gourmet Tom Pardue on board. Today and he and Miss Phyllis serve up some delicious fried crappie with honey hush puppies on the side.
Tom’s Tip: When serving fish and hush puppies, be sure to cook the hush puppies first so you can serve your fish hot out of the pan.
Honey Hush puppies:
- 2 cups self-rising corn meal
- 2 eggs
- 1 tbsp onions (dried or fresh)
- 1/3 cup buttermilk
- 3 tbsp honey
Mix all ingredients together into a thick batter. Let sit for 10 minutes. Spoon into 350 degree oil and cook until golden brown.
Phyllis’ Tip: Dip your spoon into the hot oil before spooning your batter to keep it from sticking.
- crappie fillets
- 2 cups corn meal
- 2 cups panko bread crumbs
- red and white pepper (to taste)
- salt (2 taste)
Mix dry ingredients together. Place crappie fillets in breading mixture and toss until coated evenly. Place in 350 degree oil and cook 3-5 minutes or until golden brown.
