Wild Side Gourmet: Turkey Wraps

The smile on a hunter’s face after a successful hunt can only be surpassed by the smile that comes when they find out Wild Side Gourmet Tom Pardue is going to turn that harvest into a mouth-watering meal. Today Tom and his lovely wife Miss Phyllis show us how to make turkey wraps.

Ingredients:
1 large onion
1 red and 1 yellow sweet pepper
1 tomato
1 turkey breast
1 cabbage
olive oil
salt
black pepper
red pepper
garlic powder
1/2 cup white wine
honey

Slice the onion and peppers, then sauté with olive oil until tender. Set aside.

Peel 8-10 leaves from the cabbage head and sauté or steam lightly until they are soft enough to roll easily. Slice turkey breast into strips, then season to taste with salt, garlic, black and red pepper. Bring skillet to medium-high heat and lightly cover the bottom with olive oil. Roll up the turkey strips in the cabbage leaves, then place them in the skillet. Cook for 18-20 minutes, turning occasionally until golden brown.

When the cabbage leaves have browned nicely, deglaze the the skillet with about 1/2 cup white wine, then pour honey on top of the wraps until lightly covered. Add sautéed onion and pepper, then simmer for 2-3 minutes or until warmed through. Dice the tomato and add on top. Simmer another minute or two, then serve and enjoy.
